I got the idea for my Raw Vegan Lemon Meringue Pie (nut free) from the Living Light Chef Showcase Coconut Custard Pie by Vinnette Thompson.
I really like the idea of having a Raw Pie without nuts, I love nuts, but the majority of raw gourmet deserts use lots of nuts, so it is a very refreshing to be able to make a nut-free desserts too!
Raw Vegan Lemon Coconut Meringue Pie tastes and looks like a standard cheese cake. I made this raw pie for several raw vegan potluck events and all the children (and of course the adults) love it so much they kept asking for more! :-) It takes about 30 minutes to make the crust and filling (including opening the young Thai coconuts) and another 20 minutes to make the raw whipped cream and decorate the pie. Approximate cost is about $26.
Raw Irish moss paste or gel is easy to make and can be used in a raw vegan diet as a vegan thickening and emulsifyer. Irish moss does not need to be boiled in order to create a gelatinous texture or increase thickening. It is used to fluff up or firm liquids, shakes, parfaits, mousse, ice cream, cheese cake, pies, jelly, whipped cream, yougurt, cheese, pate... and more. The key ingredient in Irish moss is carrageenan. Carrageenan is used in the mainstream food world as a thickening agent. It also has many health benefits. I got the idea for my Raw Vegan Blueberry Cheesecake (nut free) from the Coconut Custard Pie by Vinnette Thompson presented through the Living Light Chef Showcase. I really liked the idea of having a raw pie made without nuts. I do love nuts, but the majority of raw gourmet deserts use lots of nuts, so it is very refreshing to be able to make a nut-free desserts too! Making a raw vegan cheese cake is both a frugal and healthy way to consume all coconut meat after you drink the coconut water. Coconuts stay fresh without water only a few days in refrigerator unless you freeze them. And it always a good opportunity to sneak nutritious seaweed (Irish moss) into your child's diet. Raw Vegan Blueberry Cheesecake (nut free) tastes and looks like a original milk based cheese cake. When I make this raw blueberry cheesecake my husband and son say it is incredible and is their favorite. It is also easy to change the flavor of this pie. Sometimes I use raspberry or strawberry instead of blueberry.
