I got the idea for my Raw Vegan Lemon Meringue Pie (nut free) from the Living Light Chef Showcase Coconut Custard Pie by Vinnette Thompson.I really like the idea of having a Raw Pie without nuts, I love nuts, but the majority of raw gourmet deserts use lots of nuts, so it is a very refreshing to be able to make a nut-free desserts too! Raw Vegan Lemon Coconut Meringue Pie tastes and looks like a standard cheese cake. I made this raw pie for several raw vegan potluck events and all the children (and of course the adults) love it so much they kept asking for more! :-) It takes about 30 minutes to make the crust and filling (including opening the young Thai coconuts) and another 20 minutes to make the raw whipped cream and decorate the pie. Approximate cost is about $26.
